Doughnuts are delicious, but the sluggish feeling after eating a couple more than planned? Not so much.
This doughnut recipe changes that—it’s actually good for you!
Just gather the ingredients, grab some Chocolate Vegan Protein, doughnut molds, and a blender.
Makes 12 doughnuts.
Ingredients:
For the doughnuts:
- 300 ml plant-based milk
- 80 g apple sauce
- 100 g banana
- 200-250 g cooked sweet potato (skin on)
- 50 ml maple syrup
- 80 g Vivo Life chocolate vegan protein
- 80 g spelt flour (or your preferred flour)
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
For the glaze:
- Melted dark chocolate
- Sprinkles
Instructions:
- In a blender, combine the plant-based milk, apple sauce, banana, cooked sweet potato, maple syrup, and protein powder. Blend until smooth.
- Add the flour, baking powder, and bicarbonate of soda, then blend again or stir with a spatula until well mixed.
- Preheat the oven to 180°C. Lightly coat the doughnut molds with melted coconut oil to make sure the doughnuts come out easily.
- Spoon a heaping dessert spoon of the batter into each mold, smoothing the tops with a wet finger.
- Bake for 20-25 minutes, or until a skewer comes out clean. Let them cool for 15 minutes before removing from the molds.
- To get them crispy, preheat the oven to 220°C or an air fryer to 180°C. Place the doughnuts on a baking tray or in the air fryer basket, and heat until the outsides start to crisp.
- Once crisp, dip the doughnuts in melted dark chocolate and add sprinkles. See how long you can resist devouring them!
